| Decadent Chocoholic Cake With Cream Filling |
I thought I would include the recipe for my "masterpiece" should anyone interesting in baking it stumble upon this site. So I won't be accused of stealing someone else's recipe as my own, I got it here. It's modified though because I added my own twists with the icing and cream.
Ingredients
Cake 2/3 cup butter 8oz bittersweet chocolate, coarsely chopped 4 eggs 1 cup sugar 1/2 cup flour 1 tsp baking powder 4 tbsp cocoa powder 1 tsp vanilla extract 1/4 cup sour cream 2/3 cup heavy or whipping cream
Filling 1/2 cup whipping cream 1/2 cup mascarpone 1 1/2 tbsp granulated sugar 1 tsp pure vanilla extract
Icing chocolate icing sugar
Garnish 1 small bar white chocolate, grated
1/ Preheat the oven to 180 degrees celcius. Line a circular cake tin with grease proof paper. 2/ Melt chocolate and butter in a saucepan over hot water. Stir gently until smooth. 3/ Beat eggs with sugar and then stir in flour, cocoa powder, baking powder and vanilla extract. 4/ Fold in melted chocolate and butter mixture gradually. Then fold in sour cream. 5/ Pour batter in pan and bake 45-50 minutes or until toothpick inserted into centre comes clean. Allow to cool. 6/ Cut cake in two pieces horizontally. Of course, you could also take the less risky option and bake two separate cakes in the first place. This may reduce the probability of a cake avalanche. 7/ To make filling: pour whipped cream, mascarpone, sugar and vanilla extract into a bowl. Beat with electric mixer until it forms a peak. 8/ Spread filling over bottom layer of cake and carefully place second layer on top. 9/ To make icing: melt chocolate (as much as you want, depending on how rich you want it) in saucepan over hot water. Mix in icing sugar (use as much as you need until you get the consistency you want) and when smooth spread over cake. 10/ To garnish, sprinkle grated white chocolate over icing.Labels: baking, chocolate, dessert |

| Oolong the Rabbit |
Isn't this bunny so cute! It looks like has a pancake on his head. Although, it could be a rice cracker. Not sure. Oolong is from Hokkaido, Japan and was somewhat of a web celebrity until his passing a few years ago. His owner taught him to balance many things on his head and blogged all about Oolong's travels. Rest in Peace, Oolong. Much respect to anyone who can balance food on their head.

| Perfect Pancakes |
Anyone who knows me, knows I am obsessed with pancakes. They are my all-time favourite food. So simple, yet so delightful. Mix em, fry em, pour on some syrup and you have an instant mood enhancer. I get so excited that I dance and giggle as I'm cooking. It's quite strange. There's probably some nostalgia mixed in with my love of pancakes. I have memories of my (late) favourite Nana cooking stacks of flapjacks for me when I was little. I love them. Of course, when I mess up a pancake, I treat it as a great tragedy. Despite the simple recipe, the perfect pancake is not an easy feat - the perfect pan temperature is required. They are quite a temperamental breakfast food. But the other day, I made the kind of pancakes that brought tears to my eyes - they were so beautiful, so evenly cooked. The best I've made to date.

| The Creation Of A Masterpiece |
Here is a tale of a tragic misadventure in cooking...
The ingredients
Boy, did I have such grand hopes for this cake. The finished product however, did not turn out quite like I planned. It started off fine but just kinda went downhill. I managed to salvage it for the most part. The initial mixing and baking went quite well. I especially enjoyed the time honoured baking tradition of licking the bowls. The batter was rich, creamy and oh so chocolately.

It was halfway through the baking stage that things began to go awry. The top began to crack which I think is the source of the cakes downfall. I let it cool for a whole hour before trying to cut it in half to fill. But the fissures in the surface of the cake caused a shocking disturbance. Tragically, there was an avalanche and the sides of my cake collapsed. My beautiful cake fell apart. I tried to cut it in two but ended up with almost a dozen pieces. I could have just pronounced it dead right there, but goshdarnit, I wasn't going to give up. I decided to spread the mascarpone filling over the undamaged bottom half and try to jigsaw the broken pieces together using the mascarpone as a kind of glue base. Nice idea in theory but the puzzle was much to difficult to reconstruct. I had to choose another plan. I considered cutting the edgges off and making a very small cake, but this would not do either. I formulated a better plan to salvage my baked good. I cut the base of the cake in half and placed one half on top of the other. This created half a cake. I then took two of the largest broken pieces and sandwiched them together with the mascarpone filling. I now had two half cakes. In fact, if you look at the cake on the right hand side, it looks just like a perfect half eaten cake. I collected all the broken bits in a bowl. Looks aren't everything - they still tasted fantastic. My final step was icing the cake. This would play a major role in its beautification. Unfortunately, my bad luck did not stop here. My concentration was not only thrown off by my previous disaster but I had also accidentally written eggs instead of egg whites in my recipe. It took me about 5 minutes of mixing sugary yellow goo to figure out my icing was never going to become fluffy. By this point, I had run out of eggs and could not mix a fresh batch of icing. I attempted to create a different kind of icing using the whipped cream and chocolate. My luck would again run me afowl. After melting the chocolate, I got distracted with something else. The chocolate hardened and I could not mix it with the cream. I was officially out of eggs, whipped cream and chocolate. Dad was nice enough to pick up some more chocolate for me. Traditional icing using dark chocolate it would have to be. I mixed the melted chocolate with icing sugar and carefully smoothed it on the cake, attempting to disguise its inadequacies. I completed my cake by sprinkling grated white chocolate on top.

It didn't turn out like I planned, but it passed the taste test. Sometimes you just gotta let the mistakes slide and enjoy the fruits of your labour, whatever they may be.Labels: baking, chocolate, dessert |

| Highlights from America |
America - land of comfort food and huge portions. Never has my stomach rejoiced so much on holiday. Day after day, I happily stuffed myself. I'm missing pictures of some of my favourite meals - the Excalibur buffet in Las Vegas, Demo's Spaghetti and Steak House in Nashville, Golden Corral Buffet and Grill in Raleigh and Bubba Gump Shrimp Co. in San Francisco. But I did take SOME photos to remember my eating experiences.

Hollywood, CA - Cheezy fries at Johnny Rockets at Hollywood & Highland. The ketchup smiley face was cute. I still find American cheese strange. This cheese wasn't that bright coloured, but what's up with orange cheese? Niagara Falls, ON - The thickest, fluffiest pancakes I've ever had! So good. It was all you can eat, but I honestly couldn't fit more than one plateful. I'm not 100% sure but i think it was at the Continental Pancake House.
Niagara Falls, ON - Eating icecream in Canada. One of my life goals achieved.
San Francisco, CA - Mmm.... IHOP, how I love you. This was from my first IHOP experience. Chocolate pancakes completed with chocolate chips and cream. Very yummy. I wanted more.
Tijuana, Baja California - Quesdillas at a Mexican restaurant on the Avenida Revolucion. Simple and tasty. I'm so very proud of my Mexican eating experience.
Bevery Hills, CA - You know a dessert is big when it's about the size of your head. There was no way I could finish this brownie sundae at the Hard Rock Cafe at the Beverly Centre. It was delicious but I think the thing I liked most was that it seemed bottomless. I hate when desserts are over too quickly.

| Greetings folks! Welcome to the chronicles of my eating experiences. Food is one of my greatest pleasures in life. Nothing will bring such wild and childish excitement to my face like a stack of freshly cooked pancakes or a bowl of hot pasta or a steaming hot pizza or... you get the point. I love to eat. I spend most of the day thinking about food but I practice self-control. If I ate every time I thought about eating, I'd be writing a blog about weight loss instead.
