Salmon Eggs Benedict
I knew I should have taken my camera with me today but alas, I did not. I had a really delicious meal though that is well worthy of me documenting even without the visual evidence.

I was feeling a little low on energy so being the creature of habit I am, I popped into the cafe at the bottom of Kate Edgar (which I've been to every Wednesday for the last 3 weeks). I can't remember it's name. I am such a good reviewer. lol. But if you go to Auckland Uni, you know what I am talking about. I pondered the menu for awhile before deciding on the Eggs Benedict with salmon. Such a good choice. I wasn't expecting something that good from a cafe at university so I was pleasantly surprised. It was nicely presented with the toast, spinach, salmon and eggs all stacked up on top of each other and doused in hollandaise. It looked extremely appetising. The salmon was very flavourful and blended perfectly with the hollandaise and soft poached eggs whose yolks ran when I broke them with my knife. The toast was tasty with just the right amount of crunch to softness ratio and appeared to be lightly buttered. There was a good amount of hollandaise too. Enough extra so that I could slide bits of toast around in it. I would definitely eat this again. The best eggs benedict I have ever had. A perfect harmony of ingredients. I'll get a photo next time. For now, just imagine it.
