| The Ultimate Eggsperience |
Tonight, I intended to make a nice healthy omelette to compensate for the Chai tea frappachino and triple chocolate cake I consumed at The Office. However, my omelette was so weighty that I couldn't flip it, so I turned it into scrambled eggs. It turned out to be the best scrambled eggs ever! Soooo good.
I even found a double yolk in one of my eggs. I'm not sure but I think it must be good luck.
 In case you want to replicate it. Here's how I made it. Pour a little olive oil into a pan and add some garlic. Stir a little, then add mushrooms until brown. Add tomatoes. These won't take long to cook. Remove mushroom and tomato from pan. Cook frozen spinach. Remove from pan. You could probably cook that with the other vegies but I forgot. Remove spinach. Combine eggs and milk for omelette mixture. Spray pan with cooking spray. Pour mixture into pan. Add spinach. Sprinkle lots of oregano and thyme. Add BBQ and tomato sauce. Add mushroom and tomato. Then scramble. Add a bit of pepper before serving and maybe some tasty bread.
